<p>Comment allez-vous en cette journée particulièrement froide ? Il faisait -6°C ce matin au réveil. Hum. Moi qui aime la chaleur, ce fut particulièrement difficile. Heureusement, c&rsquo;est bon pour la nature et avec l&rsquo;été qu&rsquo;on a connu, ça fait sans aucun doute du bien à la végétation.</p>
<p>Aujourd&rsquo;hui, j&rsquo;ai voulu vous proposer une recette aux épices qu&rsquo;on aime tant. Une amie est partie en France durant les vacances de la Toussaint et m&rsquo;a ramené des nonnettes. Je ne connaissais que de nom mais n&rsquo;avais jamais goûté. Miam !</p>
<p>Lorsque j&rsquo;ai réfléchi à quelques idées pour le calendrier, j&rsquo;ai repensé à cette petite gourmandise moelleuse. Je suis parti à la recherche de recettes, j&rsquo;ai testé et elle a approuvé. Voici donc la recette de ces petits pains d&rsquo;épice fourrés à la marmelade d&rsquo;orange&#8230; mais n&rsquo;hésitez pas à utiliser une autre confiture (ou même un caramel) selon les envies.</p>
<p>Selon le moule que vous utiliserez, cela risque de coller. Si votre moule est en silicone, pas de problème. Si ce n&rsquo;est pas le cas, je vous conseille de beurrer et fariner votre moule avant d&rsquo;y déposer la pâte. Vous pouvez aussi utiliser des petits papiers à muffins pour éviter ce problème, mais la forme ne sera pas ronde alors. A vous de choisir ce que vous préférez 😉</p>
<p>Cette recette est rapide à préparer et, selon les épices et le miel utilisés, le goût variera. Faites-vous plaisir, essayez, taguez-moi sur les réseaux et je suis certain que vous serez conquis par ces nonnettes.</p>

<p>Si vous voulez profiter des dernières pêches avant de leur dire au revoir, voici la recette qu&rsquo;il vous faut. Elle est simple et efficace et est le parfait trait d&rsquo;union entre l&rsquo;été et l&rsquo;automne, car elle propose des fruits très estivaux à des épices réconfortantes automnales.</p>
<p>Cette recette est extrêmement facile et rapide à réaliser. Vous pourriez même demander à vos enfants de vous aider, cela s&rsquo;y prête sans aucun problème !</p>
<p>Pas de décoration impressionnante, pas de finitions minutieuses qui demandent des heures de concentration. Vous avez un gâteau très « cake », un crumble, et basta. Quand vous dégustez ce dessert, vous ne pouvez qu&rsquo;être réconforté/e, comme un gros câlin qui vous fait du bien et réchauffe le corps et l&rsquo;âme.</p>

Elle et moi aimons la pâtisserie française, mais nous aimons aussi les épices et les ingrédients originaux en cuisine. Bref, on adore tester, innover, essayer et apprendre. 				<div class="et_pb_text_inner"><p>Un de mes desserts favoris est sans aucun doute le flan pâtissier. Il existe de très nombreuses versions actuellement car cette gourmandise revient à la mode depuis 2-3 ans, et je ne m&rsquo;en lasse pas.</p>
<p>Que vous soyez amateur d&rsquo;un flan avec une pâte sucrée ou feuilletée, que vous préfériez le flan vanille ou agrémenté d&rsquo;une saveur particulière (pistache, café, praliné, etc.), si vous aimez les flans, vous aimez les flans. Peu important leur saveur.</p>
<p>Pour ce 8e jour du calendrier, j&rsquo;aimerais vous parler de la cheffe Nina Métayer, J&rsquo;ai découvert son talent dans l&rsquo;émission « Qui sera le prochain grand pâtissier », puis j&rsquo;ai suivi son parcours dans les médias. Elle a été élue meilleure pâtissière de l&rsquo;année et ses créations sont gourmandes et à couper le souffle. Je ne peux que vous encourager à la suivre sur Instagram ou, si vous en avez la chance, à goûter ses créations. Que tout semble alléchant !</p>
<p>Dans son livre « La Délicate Pâtisserie », elle nous offre la recette de son flan tonka, dont l&rsquo;appareil à flan est aromatisé avec les saveurs suaves de la fève tonka. J&rsquo;adore cette épice et je DEVAIS essayer cette recette. Au final, un flan somptueux, avec une pâte craquante, des saveurs complexes et le plaisir régressif du flan.</p>

<p>La recette que je vous partage aujourd&rsquo;hui m&rsquo;a été donnée par Carlota, que vous avez sans aucun doute vue à mes côtés dans l&rsquo;émission &lsquo;Bake Off Vlaanderen&rsquo;. Cette émission m&rsquo;a permis de faire la connaissance d&rsquo;une jeune femme dynamique, pleine d&rsquo;énergie, qui a le sourire sur les lèvres et le cœur sur la main. <p>Lors d&rsquo;un des épisodes du programme culinaire, nous avions dû préparer des biscuits pour le jury constitué de Herman Van Dender et Regula Ysewijn. Je leur avais proposé des biscuits aux saveurs bretonnes et Carlota, elle, avait mis l&rsquo;accent sur des goûts plus hispaniques. Parmi ses biscuits, il y avait donc les polvorones.</p>
<p>Outre l&rsquo;exquise saveur de la cannelle qui s&rsquo;en dégage, ces biscuits ont une texture bien particulière. Ils semblent littéralement se déliter dans votre bouche pour se transformer en poudre. C&rsquo;est troublant et délicieux à la fois. Est-ce dû au fait qu&rsquo;ils ne sont pas à base de beurre mais de saindoux ? Peut-être !</p>
<p>Assez parlé, il est temps de cuisiner. Partez vite en cuisine et dites-moi ce que vous pensez de cette recette. Perso, je suis un GRAND fan de ces biscuits. Ca me donne même envie d&rsquo;en refaire ! ^_^</p>

				<div class="et_pb_text_inner"><p>L’aventure <b>Bake Off Vlaanderen</b> a été un beau cadeau pour l’année 2020. Je m’y suis inscrit sans trop y croire, sur base d’un « Allez, soyons fou ». JAMAIS je n’aurais pu imaginer que j’avance dans la procédure de sélections et, surtout, que je sois sélectionné parmi les 10 candidats de la saison 4.</p>
<p>Vous l’avez peut-être vu à l’écran, mais mes yeux étaient remplis d’émerveillement lors des premiers pas dans la tente. Passer du rêve à la réalité est un sentiment bien particulier. Je crois que j’ai réalisé que j’avais participé à cette aventure étonnante lorsque je me suis vu pour la première fois sur mon écran de télévision. En effet, lors des enregistrements, je me suis donné à fond à chaque instant, et c’est sans doute pour cela que je semblais très concentré à l’écran. Mes idées et recettes étaient ambitieuses. Très ambitieuses. Trop peut-être, car j’ai toujours placé le goût avant la décoration. Cela a payé dans les saveurs, mais il ne me restait que trop peu de temps pour mettre l’accent sur les finitions.</p>
<p>Des regrets? Aucun. L’aventure m’a permis d’avancer, de me confronter à mes limites et de les dépasser. J’ai aussi pris confiance car Regula Ysewijn et Herman Van Dender, deux professionnels tout de même, n’ont cessé de me complimenter sur mes goûts, mes risques et mes saveurs, au point que j’en ai reçu le surnom de « smakenmeester », autrement dit le « maitre des saveurs ». Quel compliment ! Je n’ai cessé depuis cet instant de cuisiner/pâtisser, repoussant les défis les uns après les autres. Mon visuel est aujourd’hui bien plus abouti, bien plus précis et bien plus joli qu’il ne l’était il y a encore quelques petits mois. L’émission m’a donné ce déclic qu’il me fallait pour avancer, pour prendre confiance en moi et pour oser oser.</p>
<p>L’épreuve technique que j’ai préférée sous la tente est celle de la fleur au fromage (Kaasbloem). Est-ce parce que j’y suis arrivé premier ? Ca joue un peu, mais c’est surtout parce qu’on pouvait y préparer un plat salé, que j’adore aussi. Et puis, il y avait de la pâte à choux 😀</p>
<p>Je vous livre donc ici la recette de cette épreuve technique qui m’a énormément plu, car elle allie le goût, l’originalité et la décoration, et ce en toute simplicité.</p>
<p>Quand le croquant de la pâte sablée rencontre la légèreté de la pâte à choux, qu&rsquo;on y ajoute le côté épicé du curry et qu&rsquo;on termine avec une crème au fromage aussi bien réconfortante que fraîche grâce aux herbes qu&rsquo;on y met, qu&rsquo;obtient-on? Une magnifique et délicieuse fleur gourmande.</p>
