<p>Comment se passe votre premier mois de l&rsquo;année ? C&rsquo;est une période qui nous permet souvent de nous reposer un peu, de lancer de nouveaux projets dans l&rsquo;ombre et d&rsquo;attendre que les graines que nous avons plantées viennent à la lumière. C&rsquo;est peut-être aussi une période gourmande qui vous permet de préparer de bons petits plats ou desserts pour vos proches&#8230;?</p>
<p>Ces derniers temps, j&rsquo;ai envie de chocolat. Celles et ceux qui me connaissent savent que je ne suis pas un grand dévoreur de chocolat. J&rsquo;aime bien en manger de temps en temps, mais les occasions sont plutôt rares. Est-ce dû à l&rsquo;hiver et au froid persistant ? Ou ai-je simplement envie d&rsquo;autres saveurs ? Tout ça pour dire que la recette du jour est une recette au chocolat&#8230; et je sais qu&rsquo;il y a de nombreux amateurs ici !</p>
<p>Aimez-vous un brownie bien moelleux ? Quand j&rsquo;en prépare (peu souvent, donc), j&rsquo;aime qu&rsquo;il soit encore tendre en son centre. Rien de pire qu&rsquo;un brownie trop sec ! Une recette fétiche que j&rsquo;ai est celle du chef Philippe Conticini. Son brownie est à tomber par terre tellement la consistance est PARFAITE. Et je vous en livre tous les secrets dans cette recette.</p>
<p>Je sais que je me répète mais cette recette est également à tester de toute urgence. Vous allez être conquis à la première bouchée et elle deviendra aussi très rapidement une recette fétiche.</p>

<p><p>Nouvelle recette pour ce calendrier, et pas des moindres. La recette DU praliné noisettes qui vous fera voyager jusqu&rsquo;au paradis. Il a non seulement ce côté réconfortant qu&rsquo;on aime, mais cette petite pointe de sel en fin de bouche vous achèvera de plaisir.</p>
<p>Cette recette n&rsquo;est franchement pas compliquée ni longue à faire. J&rsquo;ai longtemps retarder le moment où je préparerais mon premier praliné car ça me semblait être un des grands défis insurmontables de la pâtisserie. Un jour, n&rsquo;y tenant plus (et parce que je n&rsquo;en trouvais pas en magasin), je me suis mis derrière les fourneaux et j&rsquo;ai essayé une recette. Déjà, le premier choc en goûtant le praliné. Comme c&rsquo;était bon ! Le deuxième choc est arrivé par la suite, en réalisant à quel point c&rsquo;était simple à préparer.</p>
<p>« Simple » peut être relatif, j&rsquo;en conviens&#8230; Déjà, il vous faut disposer d&rsquo;un matériel approprié pour mixer vos noisettes et votre caramel pour en faire un praliné. J&rsquo;ai grillé 3 petits hachoirs à mes débuts. Hum. J&rsquo;ai aujourd&rsquo;hui un food processor que j&rsquo;utilise pour cela et qui fonctionne à merveille. En même pas une minute, le praliné noisettes est mixé et liquide.</p>
<p>Ensuite, il vous faut aussi maîtriser le caramel à sec. C&rsquo;est une petite quantité de sucre et c&rsquo;est donc moins galère qu&rsquo;un caramel avec 200 grammes de sucre, mais ça peut en inquiéter certain(e)s. Si vous procéder en 3 étapes, tout devrait se faire facilement et naturellement.</p>
<p>Essayez donc cette recette sans plus tarder, c&rsquo;est à se taper le cul par terre :-p Vous voudrez en utiliser plus souvent dans vos gâteaux et, surtout, vous voudrez tester aussi des pralinés avec d&rsquo;autres fruits secs. J&rsquo;ai justement une recette de praliné aux noix de pécan postée il y a quelques temps. Si le cœur vous en dit&#8230;</p>

<p>Le soleil a disparu, mais ce n&rsquo;est pas une raison pour ne plus se faire plaisir, n&rsquo;est-ce pas? C&rsquo;est pour cette raison que je vous propose une recette de saison&#8230; et entièrement végétarienne. Oserais-je dire végane? Oh et puis oui, j&rsquo;ose !</p>
<p>Lorsque j&rsquo;ai préparé cette recette, j&rsquo;ai voulu essayé de faire une version automnale et vegan du délicieux brownie au chocolat qu&rsquo;on aime tant. J&rsquo;ai donc remplacé le chocolat par de la farine de châtaigne et de la crème de marron, j&rsquo;ai ajouté pignons et raisins secs&#8230;. et un brin de romarin.</p>
<p>Evidemment, la texte de ce castagnaccio n&rsquo;est pas à 100% identique à celle du brownie. Elle est beaucoup plus friable, moins « grasse » et beurrée&#8230; mais cela fait de cette gourmandise l&rsquo;en-cas idéal pour la saison, et si vous voulez vous faire plaisir sans manger trop sucré :p</p>
<p>N&rsquo;hésitez pas à remplacer les pignons par un autre fruit sec, à retirer le romarin, à remplacer le sucre de coco par du miel fort en goût. En d&rsquo;autres mots, faites-vous plaisir.</p>

<p>Une mignardise que j&rsquo;associe clairement aux fêtes de Noël, c&rsquo;est bien le nougat. Dans ces longs repas de famille constitués de multiples plats, il est bien difficile de survivre jusqu&rsquo;au dessert. Pourtant, une fois le dessert passé, cela signifie qu&rsquo;on peut débarrasser la table, sortir le jeu de cartes italiennes ou le bingo et se mettre à jouer à des jeux d&rsquo;argent.</p>
<p>Avant de crier au scandale, je vous rassure de suite : lorsque j&rsquo;étais enfant, on jouait avec des pièces de 1 franc belge. Pas grand chose, donc. On passait des heures à miser, à jouer, à crier, à sortir encore et encore les mêmes blagues qui faisaient rire à chaque fois. Il s&rsquo;agit vraiment d&rsquo;excellents moments passés en famille qui resteront gravés dans mon cœur jusqu&rsquo;à mon dernier souffle. J&rsquo;étais jeune, la vie était simple, ma famille que j&rsquo;aimais était là. Le bonheur.</p>
<p>Pendant ces moments, on servait également le café avec quelques mignardises, j&rsquo;entends par là des petits chocolats, des pralines ou du nougat. Nous étions plus que remplis, mais il y avait toujours un peu de place pour ces gourmandises&#8230;</p>
<p>La recette d&rsquo;aujourd&rsquo;hui est donc celle du nougat. Un nougat souple qui a un excellent goût de fruits secs sans inonder votre bouche de sucre. Le secret est de choisir un bon miel qui s&rsquo;associera bien avec les fruits secs sélectionnés&#8230; et bien faire torréfier ces derniers.</p>
<p>Cette recette est celle de Baptiste Fache, candidat du Meilleur Pâtissier lors d&rsquo;une des saisons précédentes.
