<p>Non, je ne vous propose pas une recette d&rsquo;apéro mais bien un dessert alcoolisé. Et pas n&rsquo;importe quel alcool car il s&rsquo;agit pour moi d&rsquo;un souvenir d&rsquo;enfance (oui oui!) : le Limoncello.</p>
<p>Quand j&rsquo;étais petit et que nous organisions les grands repas en famille, il y avait toujours ce moment après le café où le dessert arrivait et « les grands » recevaient un petit verre d&rsquo;alcool. L&rsquo;enfant que j&rsquo;étais n&rsquo;avait pas son verre, bien entendu, mais on pouvait y goûter un tout petit peu ^_^</p>
<p>Avez-vous déjà goûté au Limoncello ? Oui, c&rsquo;est très sucré, surtout ceux qu&rsquo;on trouve dans le commerce par ici. Il y en a pourtant de plus authentiques qui sont moins sucrés mais un peu plus portés sur l&rsquo;acidité. Par contre, faut pas se leurrer : c&rsquo;est de l&rsquo;alcool, donc oui c&rsquo;est sucré quoi qu&rsquo;il en soit. Mais que c&rsquo;était bon pour l&rsquo;enfant que j&rsquo;étais. Et quand j&rsquo;ai grandi, je pouvais fièrement boire mon verre à moi.</p>
<p>J&rsquo;utilise rarement de l&rsquo;alcool dans des desserts car je ne trouve pas ça évident de bien doser. Très souvent aussi, le goût de l&rsquo;alcool se perd avec le reste et ça en devient frustrant. Le Limoncello a la particularité d&rsquo;avoir un goût bien distinct qui peut être renforcé avec le citron, alors autant en profiter. </p>
<p>Cela faisait des mois que je voulais préparer des babas, alors quand j&rsquo;ai eu un peu de temps je m&rsquo;y suis lancé. Rien de bien compliqué au final, il faut bien laisser le temps à la pâte d&rsquo;incorporer le beurre et de lever&#8230; puis de s&rsquo;imbiber ! Mais quand on croque dedans, quel plaisiiiiiiiiiiiiiiiiiiiiiiiiir 😀</p>
<p>Profitez de cet été pour préparer des babas, des dizaines de babas, des milliers de babas ! Installez-vous dans votre jardin ou sur votre terrasse, servez-vous ce baba dans une assiette, prenez une première bouchée et laissez le plaisir vous submerger. Vous ne sortirez pas indemne de cette expérience. Plaisir garanti !</p>

<p>Je vous propose aujourd&rsquo;hui une recette citronnée pour les grands amateurs de cette agrume.</p>
<p>Connaissez-vous Yann Couvreur ? Il s&rsquo;agit d&rsquo;un chef pâtissier français qui jouit d&rsquo;une immense popularité depuis plusieurs années et propose des recettes sensationnelles (en plus d&rsquo;être beau gosse mais chut!).</p>
<p>J&rsquo;avais envie de vous faire plaisir, j&rsquo;ai donc opté pour cette recette de cake. « Quoi ? Un cake ? Mais c&rsquo;est idiot ! », vous allez me dire. Et bien pas du tout. Il y a une grosse différence entre le bête cake trop cuit et trop sec qu&rsquo;on connait tous, et ce cake ultra moelleux et intense en saveurs.</p>
<p>J&rsquo;adore les agrumes, et surtout le citron. Son acidité amène beaucoup de fraîcheur dans les desserts et contrebalance le goût sucré. Pour ce cake, vous y trouverez du citron un peu partout : dans le cake, dans le sirop, dans le glaçage et même en poudre. Si vous trouvez après ça que le citron ne se goûte pas assez, je ne vous croirai pas.</p>
<p>Cette recette est franchement facile à préparer. Je vous conseille cependant de commencer par préparer la poudre de citron (voire de la faire la veille) vu qu&rsquo;il faut que cela cuise au four durant 3 bonnes heures.</p>

<p>Et vous savez qui aime aussi les épices ? Asha, bien entendu ! Asha et moi étions ensemble dans la même « saison » de Bake Off Vlaanderen. On s&rsquo;est rencontré durant la phase de sélection, et quel plaisir de se retrouver embarqués tous les deux sur le même bateau. Elle et moi aimons la pâtisserie française, mais nous aimons aussi les épices et les ingrédients originaux en cuisine. Bref, on adore tester, innover, essayer et apprendre. C&rsquo;est à chaque fois un plaisir de pâtisser avec elle, mais aussi de simplement boire un verre ensemble et papoter.</p>

				<div class="et_pb_text_inner"><p>La tarte meringuée au citron est un grand classique de la pâtisserie française, mais c&rsquo;est surtout une de mes recettes préférées. Je l&rsquo;aime surtout bien acidulée car, après tout, nous parlons bien d&rsquo;une tarte au citron, n&rsquo;est-ce pas ? Il faut donc mettre le fruit en avant.</p>
<p>Cette tarte fut l&rsquo;une des premières recettes qui m&rsquo;a accompagné sur le chemin de la cuisine. Evidemment que j&rsquo;ai déjà testé de très nombreuses recettes et variantes. Je me souviens par exemple de la tarte au citron yuzu de Jeffrey Cagnes qui est un pur délice et met en valeur le citron sous différentes formes. Cependant, les autres recettes m&rsquo;ont souvent déçu, je dois l&rsquo;avouer.</p>
<p>Je reviens systématiquement vers cette recette. Elle est simple, facile, sans chichi et plait à tout le monde (surtout à moi). Selon les envies, je rajoute encore un peu de jus de citron (frôlant parfois les 15 cl) et je diminue un peu la quantité de sucre. De plus, je laisse volontairement les zestes de citron dans la crème. De nombreuses recettes vous diront de tamiser la crème pour les enlever, mais pas moi. Quand on tombe sur un zeste, ça swingue encore plus en bouche et c&rsquo;est tellement bon !</p>
<p>La meringue est, elle aussi, très simple à réaliser. Pochez-la joliment sur votre tarte en variant les douilles et les techniques selon vos envies, ou étalez avec votre spatule. Le goût ne changera pas, vous savez 😉</p>

Faire cuire jusqu&#39;à 83°C.</span><div class="wprm-spacer"></div><span style="display: block;">Remarque : Vous pouvez aussi cuire votre préparation au bain-marie, ce qui prendra un peu plus de temps et ne vous fera pas travailler vos biceps. 				<div class="et_pb_text_inner">La madeleine est le petit gâteau gourmand par excellence pour le goûter ou tout autre moment de la journée durant lequel on veut se faire plaisir. Ce n&rsquo;est pas anodin si on parle de la madeleine de Proust, car on a chacun/e des souvenirs d&rsquo;enfance liés à ce plaisir sucré.</p>
<p>Des madeleines, j&rsquo;en fais régulièrement. J&rsquo;aime la version nature bien beurrée, mais je n&rsquo;hésite pas à varier les plaisirs selon les envies. Etrangement, j&rsquo;y mets souvent des agrumes pour y amener plus de profondeur. Le citron par exemple est à mes yeux un fruit qui accompagne parfaitement ce petit gâteau.</p>
<p>Le chef Christophe Felder propose une version citron basilic de ce dessert dans son livre « Ma Petite Pâtisserie ». Je n&rsquo;ai pas hésité à reprendre sa recette en la renforçant un peu de basilic. Je vous avoue que j&rsquo;ai également forcé sur le citron (le zeste d&rsquo;un citron vert et d&rsquo;un citron jaune dans la pâte), mais les proportions données dans la recette sont celles du chef. Libre à vous de les adapter selon vos envies.</p>
<p>Cela ne se voit pas sur les photos, mais ces madeleines sont telles qu&rsquo;on imagine les madeleines : moelleuses, sucrées/acidulées avec la jolie bosse qui les caractérise tant. Un amour de madeleines !</p>
