<p>J&rsquo;espère que vous vous portez toustes bien. Oui, je sais, ça fait longtemps que je n&rsquo;ai plus rien posté ici. Même si je pâtisse un peu moins, par manque de temps essentiellement, cela ne m&#8217;empêche pas de poster des photos sur Instagram. J&rsquo;avoue par contre avoir la flemme de réécrire les recettes par ici, et donc je ne suis plus venu par ici depuis quelques temps. Mais bonne nouvelle : en voici une qui est simplissime et délicieusement craquante.</p>
<p>Si vous me suivez depuis quelques années, vous savez que j&rsquo;ai eu la folie de créer un calendrier de l&rsquo;avent regroupant une bonne vingtaine de recettes. Même si je ne sais pas trop comment je suis parvenu à réaliser cela à l&rsquo;époque, je suis tout de même fier de l&rsquo;avoir fait, et d&rsquo;avoir pu tester et découvrir des recettes gourmandes. Parmi celles-ci, il y a les kipferls, dont j&rsquo;ai entendu parler grâce à un livre de recettes de Christophe Felder.<*p></p>
<p>A l&rsquo;époque, donc, j&rsquo;avais réalisé une recette de kipferls au café. Celle-ci est toujours disponible sur le site, si ça vous intéresse. Ces derniers temps, j&rsquo;ai fait pas mal de recettes au chocolat ou cacao, alors que j&rsquo;en mange rarement. J&rsquo;ai donc voulu tester les kipferls au cacao.</p>
<p>Préparer ces biscuits est très rapide, demande peu d&rsquo;ingrédients et donne des biscuits croquants. Le cacao donne une légère amertume au biscuit, contrebalancée par le sucre qui l&rsquo;enrobe. Au moins, vous voilà prévenu.e.</p>

<p>Halloween est presque là, et je vous propose cette recette facile de cookies à réaliser pour ou avec vos enfants. Facile et rapide !</p>
<p>Avant toute chose, remettons à César ce qui est à César. Ou plutôt à @lachocologue sur Instagram. Cette recette de cookies est d&rsquo;elle et je voulais la tester depuis TRÈS longtemps. Je ne suis pas déçu ^_^ Ces cookies sont excellents !</p>
<p>« Pourquoi ce nom étrange pour ces cookies? », allez-vous me demander. Tout cela est lié à une conversation avec une amie. Je voulais préparer un gâteau avec plein d&rsquo;yeux pour Halloween (idée que j&rsquo;ai abandonnée depuis), et j&rsquo;en avais discuté avec une amie. Je ne savais pas trop s&rsquo;il existait un yokai (esprit du Japon) qui pouvait être dans ce style. Faut dire qu&rsquo;il y a toute sorte de yokai, au Japon. Et ce yokai existait bel et bien. Du moins, il y en a un qui vit dans des shoji déchirés (les panneaux coulissants servant de murs et portes), parfois dans des tatamis ou des murs. Sa particularité est d&rsquo;avoir de nombreux yeux qui vous observent. Il serait un des yokai traditionnels des maisons hantées. Tiens donc. Idéal pour Halloween, n&rsquo;est-ce pas?</p>
<p>J&rsquo;ai utilisé des yeux en sucre qui viennent du commerce et qui m&rsquo;ont grandement facilité la tâche. Vous pouvez les confectionner en pâte à sucre ou les préparer vous-même, mais parfois c&rsquo;est bien de se faciliter la vie 😀</p>

				<div class="et_pb_text_inner"><p>Petite voyage en Italie aujourd&rsquo;hui, avec cette délicieuse recette de saison.</p>
<p>Quand j&rsquo;étais plus jeune, je ne mangeais pas trop les figues. Pourtant, je me souviens de balades dans les champs et vergers en Italie, lorsque nous allions dans le village de mes grands-parents durant les grandes vacances. On y cueillait parfois des figues fraîches, et il s&rsquo;agit d&rsquo;un fruit que j&rsquo;associe parfaitement avec l&rsquo;Italie et mes origines.</p>
<p>Toutefois, je n&rsquo;aimais pas trop ce fruit. Il est pourtant sucré, donc je ne sais vraiment plus pourquoi je n&rsquo;en mangeais pas. De plus, on trouvait aussi les figues de barbarie, un fruit pratiquement introuvable en Belgique à l&rsquo;époque, mais là aussi je n&rsquo;aimais pas trop. Là par contre je sais pourquoi : ça piquait lorsqu&rsquo;on l&rsquo;épluchait et il y avait plein de pépins embêtants à l&rsquo;intérieur.</p>
<p>Ces quelques dernières années, j&rsquo;ai goûté plusieurs ingrédients que je n&rsquo;aimais pas avant, et j&rsquo;ai souvent changé d&rsquo;avis. Je voulais donc profiter de la saison de la figue pour préparer un dessert qui sent bon l&rsquo;Italie&#8230; et la noisette en est un ingrédient inspirant aussi !</p>
<p>Je pensais préparer une tarte, mais je suis tombé sur cette recette bien italienne. Elle m&rsquo;a directement fait penser au biscuit sablé breton, et à raison. On retrouve le craquant croustillant, avec un vrai goût de noisettes. Le pur plaisir !</p>
<p>Cette recette est délicieuse, rapide, comporte du croustillant, du frais et une compotée gourmande&#8230; tout ce qu&rsquo;il faut donc pour se faire du bien en cette période où l&rsquo;énergie redescend peu à peu dans la terre et où on a juste envie de se réconforter.</p>

<p>La réponse est oui. J&rsquo;accueille aujourd&rsquo;hui mon dernier invité dans ce calendrier de l&rsquo;avent et il a tenu à me partager une recette d&rsquo;enfance qu&rsquo;il adore préparer. Quelle meilleure période que Noël afin de se souvenir de son enfance, de ces bons moments passés avec ses proches et tenter de les faire revivre un bref instant à l&rsquo;aide de quelques recettes ?</p>
<p>Le dernier invité est Regis Demanet, Chef Pâtissier de Pierre Hermé au Ritz Carlton Kyoto. Je suis donc particulièrement ravi que ce chef ait accepté ma proposition et m&rsquo;a partagé une de ses recettes personnelles. D&rsquo;ailleurs, passez donc sur son compte Instagram afin d&rsquo;y voir les belles créations qu&rsquo;il prépare, mais aussi les magnifiques photos de Kyoto qu&rsquo;il publie parfois en story.</p>
<p>Ces galettes sont simples, savoureuses et croustillantes. La recette de Regis comporte de l&rsquo;angélique confite, mais difficile d&rsquo;en trouver dans le plat pays qui est le mien. J&rsquo;ai donc remplacé par un ingrédient que j&rsquo;avais sous la main : de l&rsquo;orange confite. Le résultat fut très bon aussi !</p>

<p>La recette que je vous partage aujourd&rsquo;hui m&rsquo;a été donnée par Carlota, que vous avez sans aucun doute vue à mes côtés dans l&rsquo;émission &lsquo;Bake Off Vlaanderen&rsquo;. Cette émission m&rsquo;a permis de faire la connaissance d&rsquo;une jeune femme dynamique, pleine d&rsquo;énergie, qui a le sourire sur les lèvres et le cœur sur la main. <p>Lors d&rsquo;un des épisodes du programme culinaire, nous avions dû préparer des biscuits pour le jury constitué de Herman Van Dender et Regula Ysewijn. Je leur avais proposé des biscuits aux saveurs bretonnes et Carlota, elle, avait mis l&rsquo;accent sur des goûts plus hispaniques. Parmi ses biscuits, il y avait donc les polvorones.</p>
<p>Outre l&rsquo;exquise saveur de la cannelle qui s&rsquo;en dégage, ces biscuits ont une texture bien particulière. Ils semblent littéralement se déliter dans votre bouche pour se transformer en poudre. C&rsquo;est troublant et délicieux à la fois. Est-ce dû au fait qu&rsquo;ils ne sont pas à base de beurre mais de saindoux ? Peut-être !</p>
<p>Assez parlé, il est temps de cuisiner. Partez vite en cuisine et dites-moi ce que vous pensez de cette recette. Perso, je suis un GRAND fan de ces biscuits. Ca me donne même envie d&rsquo;en refaire ! ^_^</p>
