<p>J&rsquo;espère que votre été s&rsquo;est bien passé, que vous avez pu profiter de belles vacances chez vous ou à l&rsquo;étranger, et que vous êtes d&rsquo;attaque pour cette rentrée.</p>
<p>Vous l&rsquo;aurez remarqué si vous me suivez sur Instagram : je suis parti au Canada -plus précisément du côté du Québec- durant le mois de juillet. Qu&rsquo;est-ce que c&rsquo;était beau ! Plus d&rsquo;un mois et demi après le retour, je suis toujours en pleine nostalgie.</p>
<p>Impossible de vous résumer ces deux semaines en quelques lignes. Je vais donc vous parler de ce qui m&rsquo;a marqué, à commencer par la nature. Elle ne ressemble en rien à celle que nous connaissons en Europe. Elle dégage une force dingue, et en même temps un aspect très apaisant. De plus, les quelques chutes d&rsquo;eau que j&rsquo;ai été voir m&rsquo;ont profondément marqué. Il y avait à la fois la sauvagerie de la nature, mais aussi sa faculté d&rsquo;adaptation et la splendeur qu&rsquo;elle dégageait. Je garderai ces images jusqu&rsquo;à la fin de ma vie, je pense.</p>
<p>Impossible de ne pas mentionner la gentillesse et la chaleur des québécois. Quel plaisir d&rsquo;ailleurs d&rsquo;y avoir revu Zamyss, ma pirate préférée. La dernière fois que je l&rsquo;avais vue, c&rsquo;était il y a plus de 15 ans, et nous nous sommes retrouvés comme si nous ne nous étions jamais quittés. Plein de sourires, de bonne humeur, des festivals partout. Quelle joie de vivre.</p>
<p>Il y a aussi la nourriture. Comment ne pas en parler ? J&rsquo;ai goûté à 4 poutines différentes lors de ces 2 semaines, et ma préférée est clairement celle de l&rsquo;Hôtel Sacadomie qui se trouve au bord du lac du même nom. Un délice. J&rsquo;ai goûté aussi à de nombreuses bières de microbrasseries (slurp!), j&rsquo;ai découvert les « crèmes molles éclatées » qui sont des glaces façon soft ice trempées dans un chocolat (lait ou noir) liquide, ce qui fige le chocolat. Ils ajoutent ensuite des noisettes, de la pâte à cookie, des pépites de chocolat ou plein d&rsquo;autres choses. Un délice. Il y a aussi les queues de castor, des beignets plats et allongés, que j&rsquo;adore couverts de cassonade, de cannelle avec un peu de jus de citron. Puis le sirop d&rsquo;érable et les bleuets qui sont partout, surtout lors de vacances en été. J&rsquo;ai beaucoup mangé, et tout était à chaque fois délicieux et bien servi. Quel plaisir !</p>
<p>Peu de temps après mon retour, j&rsquo;étais en pleine dépression post-vacances. J&rsquo;ai donc eu envie d&rsquo;amener un peu de ce pays dans mon assiette. J&rsquo;ai donc préparé ces petits cakes aux myrtilles (à défaut de bleuets) avec du sucre d&rsquo;érable. Si vous n&rsquo;en avez pas, il suffit d&rsquo;utiliser de la cassonade blonde. Ces gâteaux sont moelleux, légers, légèrement fruités. Un petit en-cas parfait en toute saison, mais encore plus lors de la saison des myrtilles.</p>

<p>Si vous voulez profiter des dernières pêches avant de leur dire au revoir, voici la recette qu&rsquo;il vous faut. Elle est simple et efficace et est le parfait trait d&rsquo;union entre l&rsquo;été et l&rsquo;automne, car elle propose des fruits très estivaux à des épices réconfortantes automnales.</p>
<p>Cette recette est extrêmement facile et rapide à réaliser. Vous pourriez même demander à vos enfants de vous aider, cela s&rsquo;y prête sans aucun problème !</p>
<p>Pas de décoration impressionnante, pas de finitions minutieuses qui demandent des heures de concentration. Vous avez un gâteau très « cake », un crumble, et basta. Quand vous dégustez ce dessert, vous ne pouvez qu&rsquo;être réconforté/e, comme un gros câlin qui vous fait du bien et réchauffe le corps et l&rsquo;âme.</p>

<p>Cette recette est celle de Mikael, que vous connaissez peut-être sous le nom de @mika_patisserie sur Instagram. Lorsque je lui ai proposé de participer à ce calendrier, il a tout de suite accepté et m&rsquo;a fait l&rsquo;honneur de me donner sans doute une de ses recettes signature, celle de sa charlotte poire/vanille.</p>
<p>Quand vous lirez la recette, vous verrez qu&rsquo;il y a du boulot. Beaucoup de boulot. Retroussez vos manches car ça en vaut vraiment la peine. Les textures se répondent, le fruit est présent à plusieurs niveaux et amène la fraîcheur qu&rsquo;on attend, la gourmandise de la crème bavaroise fait du bien et cette ganache montée termine de nous achever.</p>

<p>Je suis certain que c&rsquo;est ce que vous vous dites, si vous ne connaissez ni ce gâteau, ni cet ingrédient. Laissez-moi commencer par le début. « Boterkoek », qui vient de « boter » (beurre) et « koek » (biscuit/couque). Vous l&rsquo;avez compris, il y aura donc du beurre, dans cette pâtisserie.</p


<p>Le boterkoek est un dessert d&rsquo;origine néerlandaise (Pays-Bas). Sa particularité est son goût bien beurré et les jolies stries qui recouvrent sa surface. Il en existe évidemment de nombreuses sortes, même si la version « nature » est légèrement vanillée. Rien d&rsquo;étonnant pourtant à en trouver au chocolat, aux fruits secs, avec des fruits, ou que sais-je encore.</p>
<p>Le pandan, lui, est un ingrédient issu de l&rsquo;Asie. Il s&rsquo;agit d&rsquo;une plante qui a un goût et une odeur bien typique. De plus, il colore vos préparations dans une jolie teinte vert pastel. J&rsquo;adore !</p>
<p>Il est évidemment possible de réaliser ce dessert sans l&rsquo;ajout de pandan. Je vous conseille d&rsquo;ajouter alors un peu plus de sucre vanillé si vous voulez le garder nature. Par contre, pour un peu plus d&rsquo;originalité, ajouter un peu de fleur d&rsquo;oranger, de la fève tonka et de la cannelle est entièrement envisageable et vous permettra d&rsquo;agrémenter ce dessert selon votre désir.</p>
<p>Vous avez à présent toutes les cartes en main pour réaliser ce dessert. Il est facile, il est bon, original et ne peut que plaire. <p>Je ne sais pas si cela vous dit quelque chose, mais j’en ai souvent entendu parler dans des émissions culinaires ou dans des magazines, mais je n’en avais jamais préparé ni même goûté.</p>
<p>Je suis un grand passionné du magazine “Fou de Pâtisserie” que vous connaissez sans aucun doute. C’est une source d’inspiration sans commune mesure pour les acharnés comme moi qui veulent s’atteler à de nouveaux défis… sans parler des recettes multiples qui y sont proposées.</p>
<p>Je suis évidemment leur compte Instagram et ils y parlaient d’un live avec Maxence Barbot, le chef pâtissier du Shangrila Hôtel à Paris. Il intervenait pour dévoiler tous les secrets de sa recette du Gâteau de Savoie. A votre avis, qui a donc suivi le live et noté toutes les étapes avec soin ? 😀</p>
<p>Peu de temps après, j’ai donc testé la recette et ce gâteau est sans commune mesure. Est-ce la présence exquise de vanille, le craquant à l’extérieur et le moelleux à l’intérieur ou le goût légèrement épicé de la cassonade qui rend ce gâteau de Savoie savoureux et unique ? Je n’en ai pas la moindre idée. Ce que je peux vous dire par contre, c’est que cette recette DOIT figurer parmi vos recettes préférées.</p>
<p>D’autres recettes de chefs seront publiées par ici à l’avenir. Je dispose de très nombreux livres de chefs pâtissiers et je ne peux que vous conseiller de vous les procurer car ce sont des pépites. Cette recette de Maxence Barbot est un petit joyau comme on aime tant.</p></div>
