<p>Noël est dans quelques jours déjà. Cette période est souvent épuisante car on court partout, alors j&rsquo;espère que vous prenez un peu de temps pour penser à vous et vous reposer afin de profiter un maximum des fêtes qui s&rsquo;annoncent.</p>
<p>Pour la recette du calendrier du jour, j&rsquo;aimerais vous proposer une fois de plus une recette de flan. J&rsquo;ai préparé un praliné cacahuètes il y a plusieurs mois de cela et j&rsquo;ai A-DO-RÉ ! Je me suis directement demandé ce que je pouvais en faire, et j&rsquo;ai pensé au flan.</p>
<p>J&rsquo;ai conçu ce flan autour de la cacahuète, et c&rsquo;est un délice. Il me restait dans mon armoire de la pâte de cacahuète (100%, pas du beurre de cacahuète) ainsi que du caramel au beurre salé. Ca m&rsquo;a semblé idéal pour associer tous ces éléments.</p>
<p>Comme pour chaque flan, j&rsquo;aime prévoir du temps pour les temps de repos au frais ou au froid. C&rsquo;est souvent difficile d&rsquo;attendre, mais je sais que le résultat sera au rendez-vous. Quand vous voyez la photo d&rsquo;illustration avec ce praliné coulant, ne me dites pas que ça ne vous donne pas envie. Vous mentiriez 😉</p>
<p>Une autre possibilité (si vous le désirez) serait de remplacer la pâte de cacahuète dans l&rsquo;appareil par des cuillères à soupe de praliné cacahuètes. Je n&rsquo;ai pas testé, mais cela pourrait être extrêmement bon aussi. A voir cependant si l&rsquo;équilibre en sucre persiste ou s&rsquo;il faut diminuer un peu la quantité de sucre dans l&rsquo;appareil.</p>
<p>Je m&rsquo;en retourne à mes derniers préparatifs car Noël n&rsquo;est pas encore là, et il se pourrait que vous voyez encore une ou deux recettes apparaître.</p>

				<div class="et_pb_text_inner"><p>Connaissez-vous le sésame noir ? Cuisinez-vous avec ? Je ne parle pas simplement de parsemer un peu de sésame sur vos salades, mais vraiment de cuisiner avec ? </p>
<p>J&rsquo;associe le sésame noir à la cuisine japonaise. J&rsquo;en avais déjà goûté avant, bien entendu, mais la première pâte de sésame noir que j&rsquo;ai achetée, je me la suis procurée dans une petite épicerie japonaise pas loin de l&rsquo;appartement où j&rsquo;habitais. J&rsquo;étais rentré chez moi avec cette pâte comme un trésor. Je l&rsquo;avais utilisée pour préparer un gâteau au chocolat et sésame noir qui, même s&rsquo;il était bon, fut relativement compact. La pâte de sésame noir reste un ingrédient que j&rsquo;utilise en pâtisserie uniquement, même s&rsquo;il doit exister des recettes salées.</p>
<p>J&rsquo;ai redécouvert le flan il n&rsquo;y a que très peu d&rsquo;années, mais je n&rsquo;en prépare pas souvent. Mon chéri n&rsquo;aime pas la consistance et quand j&rsquo;en prépare, soit je dois manger le flan en entier, soit je dois partager. J&rsquo;essaie donc de préparer des recettes qui me feraient me sentir moins coupable vu que je ne serai pas le seul de la maisonnée à tout dévorer&#8230; mais par moments j&rsquo;ai une envie irrésistible et j&rsquo;y succombe, pauvre mortel que je suis.</p>
<p>J&rsquo;ai eu envie de flan et de sésame noir. Au moins, ça ne m&rsquo;a pas pris des jours à trouver une recette. J&rsquo;ai donc confectionné ce délicieux flan qui a un goût intense de sésame noir, vu qu&rsquo;on en trouve dans la pâte, dans l&rsquo;appareil et en décoration posé sur le sommet. J&rsquo;avoue que mon envie a été plus que comblée, tout en sachant que ce n&rsquo;était pas écœurant ou trop fort. Un bel équilibre.</p>
<p>J&rsquo;insiste sur les temps de repos prévus pour la pâte et le flan une fois cuit. Cela vous permettra d&rsquo;avoir une belle pâte et un flan qui se tient bien.</p>

				<div class="et_pb_text_inner"><p>Un de mes desserts favoris est sans aucun doute le flan pâtissier. Il existe de très nombreuses versions actuellement car cette gourmandise revient à la mode depuis 2-3 ans, et je ne m&rsquo;en lasse pas.</p>
<p>Que vous soyez amateur d&rsquo;un flan avec une pâte sucrée ou feuilletée, que vous préfériez le flan vanille ou agrémenté d&rsquo;une saveur particulière (pistache, café, praliné, etc.), si vous aimez les flans, vous aimez les flans. Peu important leur saveur.</p>
<p>Pour ce 8e jour du calendrier, j&rsquo;aimerais vous parler de la cheffe Nina Métayer, J&rsquo;ai découvert son talent dans l&rsquo;émission « Qui sera le prochain grand pâtissier », puis j&rsquo;ai suivi son parcours dans les médias. Elle a été élue meilleure pâtissière de l&rsquo;année et ses créations sont gourmandes et à couper le souffle. Je ne peux que vous encourager à la suivre sur Instagram ou, si vous en avez la chance, à goûter ses créations. Que tout semble alléchant !</p>
<p>Dans son livre « La Délicate Pâtisserie », elle nous offre la recette de son flan tonka, dont l&rsquo;appareil à flan est aromatisé avec les saveurs suaves de la fève tonka. J&rsquo;adore cette épice et je DEVAIS essayer cette recette. Au final, un flan somptueux, avec une pâte craquante, des saveurs complexes et le plaisir régressif du flan.</p>
<p>La recette demande plusieurs temps au frais ou au froid, essentiels pour la bonne réussite du flan. Ne trichez donc pas là-dessus. Vous verrez au résultat que ça valait le coup d&rsquo;attendre&#8230;</p>

<p>Lorsque j&rsquo;ai vu fleurir des photos de flan pâtissier sur Instagram, je n&rsquo;ai pas pu résister. J&rsquo;ai absolument voulu trouver une recette qui en vaille la peine afin de la tester et de combler ma frustration.</p>
<p>J&rsquo;ai donc reçu la recette de Christophe Felder qui, il faut le dire, reste une valeur sûre. J&rsquo;ai déjà préparé plusieurs de ses préparations, et c&rsquo;était à chaque fois clair et bien expliqué. Je me suis donc embarqué dans cette aventure et je ne le regrette pas.</p>
<p>Comme vous le verrez, la recette ne demande pas énormément de préparations mais plutôt de longs temps d&rsquo;attente, tant dans la préparation que dans l&rsquo;attente avant la dégustation. Je ne peux que vous conseiller vivement de les respecter si vous voulez assurer la réussite de la recette.</p>
<p>De plus, je vous propose de laisser la pâte au surgélateur durant la nuit une fois qu&rsquo;elle a été foncée. Cela fait quelques semaines que je congèle systématiquement mes pâtes à tartes ou flans avant cuisson et cela tient ses promesses : elle ne se rétracte plus, la cuisson est homogène et le résultat est splendide !</p>
<p>Cette recette m&rsquo;a vraiment rassuré avec le flan. A côté des franches réussites, il y a aussi une floppée de photos sur lesquelles les flans ne sont pas au top. Il ne faut pas croire que c&rsquo;est simple de préparer un flan, loin de là. De nombreux pièges se dressent sur la route. Si vous voulez en tester un premier, cette recette est faite pour vous. Suffit de regarder l&rsquo;intérieur du flan et vous ne pourrez pas résister&#8230;</p></div>
