<p>En ce 1er décembre, je lance officiellement le Calendrier de l&rsquo;Avent sur mon compte Instagram et sur mon site web. Vous y trouverez chaque jour un nouveau post ou une nouvelle photo, et ce dans le but de vous faire plaisir et de vous donner une bonne vingtaine de recettes qui vous combleront durant ces fêtes de fin d&rsquo;année.</p>
<p>Vous y trouverez de recettes de toutes sortes : des tartes, des biscuits, des entremets ou des brioches. Il y en aura pour tous les goûts, pour toutes les envies. De plus, les recettes publiées sont des recettes que j&rsquo;apprécie énormément, des recettes de chefs qui m&rsquo;inspirent ou des recettes d&rsquo;ami(e)s pâtissiers amateurs qui ont répondu favorablement à ma proposition. Ca va être chouette !</p>
<p>La première recette, ce n&rsquo;est pas anodin. J&rsquo;ai décidé de vous proposer la recette du « Café Kipferl » de Christophe Felder.</p>
<p>Cela fait un an que j&rsquo;ai découvert sa recette de vanille kipferl. Ces biscuits sont absolument somptueux et ont été préparés à de nombreuses reprises durant les fêtes de l&rsquo;an dernier, mais aussi tout au long de l&rsquo;année. Ils sont sablés à souhait, ont un goût intense de vanille et constituent LE biscuit par excellence.</p>
<p>Il y a quelques semaines, Christophe Felder a publié la recette de ce biscuit au café. Le design était lui aussi adapté car les biscuits au café ont la forme d&rsquo;un grain de café.</p>
<p>Cette recette est super simple, demande peu de matériel et peu d&rsquo;ingrédients et offrent des biscuits du tonnerre. Soyez juste un peu patient dans la confection de la forme en grain de café, mais une fois le coup de main pris, ça avance vite.</p>
<p>Sur ce, je me tais et je laisse place à la recette. J&rsquo;espère que vous apprécierez ces biscuits autant que je les ai adorés. Préparez-les, prenez-les en photos et taguez-moi sur Instagram pour me montrer le résultat. 				<div class="et_pb_text_inner"><p>Je ne suis qu&rsquo;un pauvre humain avec ses failles et ses faiblesses, je l&rsquo;avoue&#8230;</p>
<p>Lorsque j&rsquo;ai vu fleurir des photos de flan pâtissier sur Instagram, je n&rsquo;ai pas pu résister. J&rsquo;ai absolument voulu trouver une recette qui en vaille la peine afin de la tester et de combler ma frustration.</p>
<p>J&rsquo;ai donc reçu la recette de Christophe Felder qui, il faut le dire, reste une valeur sûre. J&rsquo;ai déjà préparé plusieurs de ses préparations, et c&rsquo;était à chaque fois clair et bien expliqué. Je me suis donc embarqué dans cette aventure et je ne le regrette pas.</p>
<p>Comme vous le verrez, la recette ne demande pas énormément de préparations mais plutôt de longs temps d&rsquo;attente, tant dans la préparation que dans l&rsquo;attente avant la dégustation. Je ne peux que vous conseiller vivement de les respecter si vous voulez assurer la réussite de la recette.</p>
<p>De plus, je vous propose de laisser la pâte au surgélateur durant la nuit une fois qu&rsquo;elle a été foncée. Cela fait quelques semaines que je congèle systématiquement mes pâtes à tartes ou flans avant cuisson et cela tient ses promesses : elle ne se rétracte plus, la cuisson est homogène et le résultat est splendide !</p>

				<div class="et_pb_text_inner"><p>J’ai feuilleté ce recueil (car oui, osons ce mot!) en me demandant quelle recette je pourrais tester, mais chaque page était une invitation à me rendre dans ma cuisine, à sortir mes casseroles et à pâtisser. Pourtant, j’ai résisté à la tentation, moi un humain de chair avec ses forces, ses failles et ses faiblesses. Je me suis mis un principe essentiel : ne cuisiner des recettes qu’en saison. Car oui, cet ouvrage a classé les entremets selon les saisons, ce qui me pousse à veiller à cette saisonnalité qui a le vent en poupe.</p>
<p>J’ai donc consulté les recettes d’hiver et d’automne (car certains ingrédients chevauchent les deux saisons) et je me suis mis à la tâche. Une de ces réalisations est ce somptueux entremets au caramel, poire et safran. Il se compose de :<br />
– un biscuit succès<br />
– une crème bavaroise à la vanille et au safran<br />
– un insert caramel, poire et fleur de sel<br />
– des poires poêlées<br />
– un glaçage miroir au caramel<br />
– des poires pochées<br />
– des biscuits spéculoos</p>
<p>Chaque bouchée fut une explosion de saveurs dans le palais et, surtout, la crème bavaroise au safran fut une réelle découverte.</p>
