<p>Il y a quelques semaines, j&rsquo;ai demandé à ma collègue de me réserver à nouveau quelques coings si elle en avait assez. Elle m&rsquo;a répondu que son arbre était deux fois plus chargé que l&rsquo;an dernier, donc c&rsquo;est certain que j&rsquo;en aurais&#8230; Et en effet, j&rsquo;en ai récupérer il y a plusieurs jours.</p>
<p>Une fois les coings ramenée, restait la grande question du « J&rsquo;en fais quoi? ». Je ne voulais pas juste en faire de la pâte de coings comme l&rsquo;an dernier. C&rsquo;est délicieux, mais je voulais les tester autrement. Et d&rsquo;ailleurs, la recette est toujours disponible sur mon site ^_^</p>
<p>J&rsquo;ai pensé à une tarte et j&rsquo;avais quelques recettes sélectionnées, puis en discutant avec ma collègue, nous avons évoqué la tarte tatin. A sa simple évocation, elle m&rsquo;avait déjà convaincu. Par contre, je voulais la vraie, enfin celle que j&rsquo;imagine comme vraie :p Je parle bien entendu de celle avec de la pâte feuilletée.</p>
<p>Pour une fois, j&rsquo;ai été prévoyant car il me restait une demi pâte feuilletée maison que j&rsquo;avais surgelé et stocké « pour plus tard », et nous y sommes. Cette recette peut se faire avec une pâte de votre boulanger ou du commerce, évidemment.</p>
<p>Me voilà derrière les fourneaux, à me battre contre ces coings bien trop difficiles à couper. C&rsquo;est ce qui fait leur charme, il parait. Ou pas. Enfin bref, cette tarte aurait pu ne pas voir le jour tellement ça ressemblait à une boucherie par moments plutôt qu&rsquo;à une jolie découpe. Oui bon, certaines choses m&rsquo;énervent aussi, hein, et ils n&rsquo;ont rien fait pour faciliter notre entente.</p>
<p>Heureusement, je suis arrivé à un résultat satisfaisant mais j&rsquo;étais surtout été sous le charme à la première bouchée. Qu&rsquo;elle est BONNE, cette tarte tatin ! On a connu des moments difficiles, les coings et moi, mais je leur pardonne tout si c&rsquo;est pour obtenir cela.</p>

				<div class="et_pb_text_inner"><p>L&rsquo;automne est une saison riche en ingrédients pour les passionnés de cuisine ou de pâtisserie. De plus, il y a de nombreuses occasions de faire la fête ou de faire plaisir à ses proches, alors pourquoi tenter d&rsquo;y résister ?</p>
<p>Un légume que j&rsquo;adore cuisiner est le potiron/potimarron. On le connait surtout pour la soupe, mais il existe tellement d&rsquo;autres possibilités, donc en pâtisserie. Depuis plusieurs années, je préparer une pumpkin pie durant le mois de novembre, mais je ne comprends pas pourquoi je n&rsquo;en fais qu&rsquo;une seule fois par an. Ce dessert est tellement onctueux, complexe en saveurs et apporte le réconfort des épices qui fait tellement de bien en cette période.</p>
<p>Un dessert que je fais très très très rarement, c&rsquo;est le cheesecake. Le fait que mon chéri ne soit pas un amateur de ce dessert joue sans doute, alors que je trouve que le Philadelphia (ou cream cheese) dans un dessert amène de l&rsquo;onctuosité qui fait du bien.</p>
<p>Pour une fois, j&rsquo;ai décidé d&rsquo;écouter mes envies plutôt que les goûts de mon partenaire, et me voilà donc avec cette recette qui associe cheesecake et pumpkin pie, le tout avec des noix de pécan&#8230; parce que c&rsquo;est trop bon !</p>
<p>Ce dessert peut être dégusté comme un cheesecake « traditionnel », voire même être préparé dans un moule rond. J&rsquo;ai voulu innover et proposer des portions individuelles, facilement transportables. De plus, j&rsquo;ai fait goûté ce plaisir sucré à de nombreuses personnes de mon entourage, et ça a été apprécié à l&rsquo;unanimité, dont une amie qui s&rsquo;est sentie frustrée après 2 parts et en aurait mangé bien plus. Je crois donc que vous pouvez suivre cette recette les yeux fermés, ça plaira à vos convives.</p>

				<div class="et_pb_text_inner"><p>J’ai feuilleté ce recueil (car oui, osons ce mot!) en me demandant quelle recette je pourrais tester, mais chaque page était une invitation à me rendre dans ma cuisine, à sortir mes casseroles et à pâtisser. Pourtant, j’ai résisté à la tentation, moi un humain de chair avec ses forces, ses failles et ses faiblesses. Je me suis mis un principe essentiel : ne cuisiner des recettes qu’en saison. Car oui, cet ouvrage a classé les entremets selon les saisons, ce qui me pousse à veiller à cette saisonnalité qui a le vent en poupe.</p>
<p>J’ai donc consulté les recettes d’hiver et d’automne (car certains ingrédients chevauchent les deux saisons) et je me suis mis à la tâche. Une de ces réalisations est ce somptueux entremets au caramel, poire et safran. Il se compose de :<br />
– un biscuit succès<br />
– une crème bavaroise à la vanille et au safran<br />
– un insert caramel, poire et fleur de sel<br />
– des poires poêlées<br />
– un glaçage miroir au caramel<br />
– des poires pochées<br />
– des biscuits spéculoos</p>
<p>Chaque bouchée fut une explosion de saveurs dans le palais et, surtout, la crème bavaroise au safran fut une réelle découverte.</p>

<p>Hier, c&rsquo;était la chandeleur. J&rsquo;avoue que chaque année, je profite de ce prétexte pour préparer des crêpes et les manger sans aucune culpabilité. J&rsquo;en fais tout un régiment afin de pouvoir en manger des versions salées pour le repas et quelques sucrées pour le dessert. Peu importe la garniture que je mets dessus, les crêpes sont préparées avec la même pâte.</p>
<p>J&rsquo;ai testé de très nombreuses recettes et, depuis quelques années, je prépare toujours la même. Celle-ci est faite d&rsquo;une mélange de lait et de cidre brut, ce qui a pour effet de rendre la pâte moelleuse et légère&#8230; en plus de lui donner un petit goût plaisant.</p>
<p>La grande question cette année était : de quoi vais-je l&rsquo;agrémenter ? J&rsquo;ai alors trouvé un paquet de mandarines dans le frigo, et il me restait un peu de poudre de mandarine que j&rsquo;avais préparée pour un autre dessert (recette de Yann Couvreur). Jackpot! La mandarine serait le fil conducteur.</p>
<p>Ah, et vu que Imbolc tombe le 1er février et que je n&rsquo;avais rien préparé de particulier pour l&rsquo;occasion, j&rsquo;ai même préparé une pâte à crêpes supplémentaire, ce qui fait que j&rsquo;ai fait double dose de crêpes cette année ^_^</p></div>
