<p>Comment allez-vous ? J&rsquo;espère que le retour du soleil vous réchauffe le corps et l&rsquo;âme.</p>
<p>Cela fait un peu de temps que je n&rsquo;ai rien partagé par ici, mais cela ne signifie pas que je n&rsquo;ai rien fait, loin de là. Niveau cuisine et pâtisserie, les créations continuent encore et toujours. Je poste plus souvent mes photos sur Instagram, mais je ne partage pas forcément de nombreuses recettes actuellement. Je teste des recettes de chefs, je crée les miennes, je fais plaisir à mes proches en réalisant « les classiques ». Toutes les infos sur ma page Insta bien entendu, alors il est plus que temps de me suivre si ce n&rsquo;est pas encore le cas 😉</p>
<p>De plus, le boulot demande énormément d&rsquo;énergie, ce qui fait que les journées passent très vite et que soirs et week-ends sont dédiés à des activités pour me ressourcer (ou au repos). Je pense à de la lecture, à un peu d&rsquo;exercice physique, ainsi qu&rsquo;à l&rsquo;imaginaire. Je travaille tout doucement à la création du scénario d&rsquo;une nouvelle murder party (huis-clos) avec une amie française. Je continue à jouer/masteriser des parties de jeux de rôle avec des amis ou je participe à des huis-clos. Que ça fait du bien !<br />
Il y a également l&rsquo;énergétique qui prend sa place et qui me recharge en énergie. Méditation, visualisation, reiki, soins énergétiques, chakra/aura ne sont que quelques sujets d&rsquo;intérêts actuels. Quel domaine riche et puissant !</p>
<p>Trêve de bavardages. La recette du jour est une tarte à la cannelle et à la rhubarbe. Il s&rsquo;agit d&rsquo;une recette simple et facile et vous pouvez utiliser un reste de pâte sucrée d&rsquo;une autre tarte. Il est bien entendu possible d&rsquo;ajouter plus de rhubarbe par rapport à ce que je propose (et ce que vous voyez en photo). Faites selon vos envies et vos goûts. Pourquoi ne pas ajouter un peu plus de cannelle si vous aimez vraiment ça, justement ?</p>

				<div class="et_pb_text_inner">La rhubarbe est sans doute un des fruits que j&rsquo;ai adoré cuisiner et manger cette année. Je me suis essayé à de nombreuses recettes et j&rsquo;ai pu le découvrir de plusieurs façons différentes.</p>
<p>Malgré le temps pluvieux que nous avons eu en Belgique durant tout l&rsquo;été, on pourra au moins dire que cela a eu un effet positif sur mon potager : j&rsquo;ai pu récolter de la rhubarbe tardive qui m&rsquo;a permis de préparer cette tarte. N&rsquo;oublions pas non plus le fait que, juste à côté des plans de rhubarbe, il y a mes groseilles rouges. J&rsquo;en avais surgelé quelques unes que j&rsquo;ai pu utiliser pour cette recette, ce qui fait que les fruits utilisés viennent tous du jardin, et ça fait vraiment plaisir !</p>
<p>Comment préparer la rhubarbe, cette fois ? Et pourquoi pas en « curd », tiens. J&rsquo;aime beaucoup les tartes au citron (lemon curd) et je m&rsquo;étais essayé à un curd de grenade il y a plusieurs semaines. J&rsquo;avais d&rsquo;ailleurs posté la recette par ici. Etait-ce donc possible de préparer un curd de rhubarbe ?</p>
<p>Voilà chose faite avec cette recette qui fait les beaux jours de la rhubarbe, tout en utilisant un peu de groseilles pour y amener cette belle couleur rosée et renforcer l&rsquo;acidité qui me plait. J&rsquo;ai repris la recette de ma pâte sucrée qui fait sensation pour ma tarte au citron, et voici le résultat.</p>
<p>Cette recette fonctionne aussi avec de la rhubarbe surgelée, mais dans ce cas il faudra utiliser très peu d&rsquo;eau dans la première étape du curd. Si vous ne savez donc pas quoi faire de restes de rhubarbe, pourquoi ne pas essayer cette recette ?</p>

<p>Habiter près de Bruxelles a ses avantages, mais de très nombreuses pâtisseries de grands chefs ne se trouvent pas par chez nous, et si on ne va pas chaque semaine à Paris, ça devient vite frustrant. C&rsquo;est une des raisons qui m&rsquo;a poussé à m&rsquo;attaquer à la préparation de desserts de chefs. Il y a eu des catastrophes mais aussi de belles réussites, et celle-ci en fait partie.</p>
<p>J&rsquo;adore la rhubarbe mais c&rsquo;est sans doute la première année où je prends le temps d&rsquo;en préparer dans différentes préparations. J&rsquo;avais déjà entendu parler de cette recette de Philippe Conticini, et cette année j&rsquo;ai voulu m&rsquo;y risquer. J&rsquo;en suis ravi !</p>
<p>La pâte sucrée est croquante, la crème d&rsquo;amande (version simplifiée ici par rapport à la recette du chef Conticini) est savoureuse, la compotée de rhubarbe est savoureuse et les lamelles caramélisées offrent un visuel qui impressionne directement.</p>
<p>Comme à chaque fois, j&rsquo;explique la recette pas à pas afin de vous permettre d&rsquo;arriver au résultat attendu. N&rsquo;oubliez jamais qu&rsquo;un four n&rsquo;est pas l&rsquo;autre et que vous êtes le/la mieux placé/e pour raccourcir ou allonger les temps de cuisson si nécessaire.</p>
