On y retrouve des soba aux fleurs de cerisier (sakura), de fines tranches de radis, de jeunes oignons éminces, des algues nori et du wasabi. L&rsquo;assiette est accompagnée d&rsquo;un mentsuyu, un bouillon dans lequel on trempe les nouilles. Itadakimasu !</p>
<p>Tous les amateurs de cuisine japonaise connaissent les soba. On retrouve ces nouilles absolument partout, chaque région tentant de les agrémenter selon les envies et les ingrédients du coin.</p>
<p>Je suis parti 3 fois au Japon. Lors de mon premier voyage, nous avions prévu un périple de 3 semaines environ en plein été. Quelle folie ! Je le sais, mais en tant que prof, il n’y a pas vraiment 36 solutions si on désire partir à l’étranger aussi longtemps. J’ai donc eu la chance de découvrir le Japon avec plus de 35°C de température et, surtout, un taux d’humidité particulièrement élevé. Heureusement, on s’habitue à tout et, de toute façon, tout le monde transpire et se retrouve dans la même galère. Il faut juste profiter des moments de pause avec un peu d’air frais pour faire tomber la température internet.</p>
<p>Lors de ce voyage, je me souviens de mon escapade à Nara. Nous y passions la journée sous un soleil radieux et avons un peu visité la ville avant de nous diriger lentement vers l’immense zone verte qui fait la réputation du coin. L’heure de midi était déjà bien entamée, les estomacs criaient famine et nous voulions nous assoir, manger un bon plat et nous rafraichir. On s’est donc installé par hasard dans un restaurant qui ne payait pas de mine et nous avons vu sur la carte qu’ils proposaient des ざるそば (zaru soba). J’avoue qu’à l’époque, je ne savais pas trop ce que c’était. Je connaissais les soba, évidemment, mais pas les zaru soba. On s’est renseigné et, vous me connaissez, j’ai voulu tester.</p>
<p>L’assiette est arrivée devant moi, j’ai suivi les explications de dégustation de la serveuse (car apparemment on ne rigole pas avec ça!) et j’ai goûté. Les soba sont accompagnées d’un ‘mentsuyu’, autrement dit un bouillon froid dans lequel on trempe les nouilles avant de les slurper avec gourmandise. Un plat absolument parfait lors d’une forte chaleur. Le bouillon et les nouilles sont froides, cela nourrit le corps sans l’alourdir… bref c’était nickel.</p>
<p>Ce plat, je ne le prépare pas trop souvent. Pourquoi ? Aucune idée. Pourtant, nous aimons tous les deux cela, c’est parfait et lorsque le soleil tape, c’est pourtant l’idéal. Il y a peu, je me suis rendu à l’épicerie japonaise près de chez nous et ils y vendaient des soba au sakura (fleurs de cerisiers). La couleur rose était splendide et je ne pouvais pas imaginer les manger autrement qu’en zaru soba. Comme en plus la période de la floraison débute au Japon, c’était le timing idéal. J’ai donc agrémenté cela de radis, de jeunes oignons et de nori, et j’ai soupiré de plaisir.</p>

<p>Quoi que c&rsquo;est donc? Non, ça n&rsquo;a absolument rien à voir avec le monde de Némo. Non, ce n&rsquo;est pas le nouveau site de rencontres à la mode. « Meat Doria », ou gratin de riz, ou hachis parmentier de riz à la japonaise.</p>
<pJe vais vous confesser quelque chose : j'ai été trois fois au Japon et je n'ai JAMAIS goûté ça là-bas. C'est en consultant des recettes de cuisine japonaise que je suis tombé dessus et que j'ai trouvé ça plutôt pas mal. Il faut dire que j'adore le hachis parmentier. C'est un plat facile à préparer, qui nourrit le corps et l'âme (surtout en hiver) et que j'agrémente d'épices selon les envies. De plus, ce sont des ingrédients simples, peu chers et, du coup, pratiques pour le budget. Et enfin, le dernier avantage est que quand on accueille des amis ou de la famille, le repas est déjà prêt et ne demande qu'à être réchauffé.</p>
<p>Je suis donc tombé sur cette recette et j&rsquo;ai directement été interpellé par la couche de riz. Ce gratin est en fait « renversé » par rapport au hachis parmentier. La couche de riz est à la base et on pose la viande/sauce juste au-dessus. Les goûts sont japonisés comme on trouve dans certaines recettes adaptées à la mode japonaise.</p>
<p>La recette du doria a été créée par un chef suisse qui travaillait au Japon durant les années 1930. A l&rsquo;origine, il s&rsquo;agissait de riz, fruits de mer, le tout recouvert d&rsquo;une sauce béchamel et de fromage. Enfin, tout comme le hachis, on cuisait le tout au four pour gratiner. Mais pourquoi « Doria »? Il semblerait que celui-ci provienne d&rsquo;un célèbre général de la navy italienne&#8230; peut-être en référence aux fruits de mer sur le plat d&rsquo;origine?</p>
<p>Le plat a tout d&rsquo;abord été servi durant de nombreuses années dans les « kissaten ( 喫茶店 ) », des cafés à l&rsquo;ancienne dirons-nous. Les étudiants s&rsquo;y rendaient souvent pour déguster ce plat après les cours, et les employés le mangeaient pour le lunch. Ensuite, certaines chaînes de café ont repris l&rsquo;idée dans les années 1970/1980 et ont popularisé le plat, qui est aujourd&rsquo;hui considéré comme un plat familial populaire.</p>
<p>La recette proposée ici est donc une recette à base de viande. Testez et vous verrez que c&rsquo;est bon !</p>

				<div class="et_pb_text_inner"><p>L’aventure <b>Bake Off Vlaanderen</b> a été un beau cadeau pour l’année 2020. Je m’y suis inscrit sans trop y croire, sur base d’un « Allez, soyons fou ». JAMAIS je n’aurais pu imaginer que j’avance dans la procédure de sélections et, surtout, que je sois sélectionné parmi les 10 candidats de la saison 4.</p>
<p>Vous l’avez peut-être vu à l’écran, mais mes yeux étaient remplis d’émerveillement lors des premiers pas dans la tente. Passer du rêve à la réalité est un sentiment bien particulier. Je crois que j’ai réalisé que j’avais participé à cette aventure étonnante lorsque je me suis vu pour la première fois sur mon écran de télévision. En effet, lors des enregistrements, je me suis donné à fond à chaque instant, et c’est sans doute pour cela que je semblais très concentré à l’écran. Mes idées et recettes étaient ambitieuses. Très ambitieuses. Trop peut-être, car j’ai toujours placé le goût avant la décoration. Cela a payé dans les saveurs, mais il ne me restait que trop peu de temps pour mettre l’accent sur les finitions.</p>
<p>Des regrets? Aucun. L’aventure m’a permis d’avancer, de me confronter à mes limites et de les dépasser. J’ai aussi pris confiance car Regula Ysewijn et Herman Van Dender, deux professionnels tout de même, n’ont cessé de me complimenter sur mes goûts, mes risques et mes saveurs, au point que j’en ai reçu le surnom de « smakenmeester », autrement dit le « maitre des saveurs ». Quel compliment ! Je n’ai cessé depuis cet instant de cuisiner/pâtisser, repoussant les défis les uns après les autres. Mon visuel est aujourd’hui bien plus abouti, bien plus précis et bien plus joli qu’il ne l’était il y a encore quelques petits mois. L’émission m’a donné ce déclic qu’il me fallait pour avancer, pour prendre confiance en moi et pour oser oser.</p>
<p>L’épreuve technique que j’ai préférée sous la tente est celle de la fleur au fromage (Kaasbloem). Est-ce parce que j’y suis arrivé premier ? Ca joue un peu, mais c’est surtout parce qu’on pouvait y préparer un plat salé, que j’adore aussi. Et puis, il y avait de la pâte à choux 😀</p>
<p>Je vous livre donc ici la recette de cette épreuve technique qui m’a énormément plu, car elle allie le goût, l’originalité et la décoration, et ce en toute simplicité.</p>
<p>Quand le croquant de la pâte sablée rencontre la légèreté de la pâte à choux, qu&rsquo;on y ajoute le côté épicé du curry et qu&rsquo;on termine avec une crème au fromage aussi bien réconfortante que fraîche grâce aux herbes qu&rsquo;on y met, qu&rsquo;obtient-on? Une magnifique et délicieuse fleur gourmande.</p>
