<p>Je ne fête pas spécialement la Saint-Valentin car, après tout, pourquoi faudrait-il uniquement attendre un jour en particulier pour le montrer à la personne qu&rsquo;on aime ? Par contre, je ne refuse jamais une occasion/un prétexte pour me mettre derrière les fourneaux et pâtisser.</p>
<p>J&rsquo;ai fait de nombreuses tartes, des entremets ou encore des gâteaux ces derniers mois. Je n&rsquo;avais cependant pas fait de macarons depuis « longtemps ». J&rsquo;aime bien en préparer et j&rsquo;apprécie énormément de bons macarons, mais c&rsquo;est toujours énormément de temps pour une pâtisserie fort ingrate. Comme j&rsquo;avais du colorant <em>rose framboise</em> dans mon armoire, j&rsquo;ai voulu me challenger en tentant de les pocher en forme de cœur.</p>
<p>Quelle recette suivre ? Je dispose d&rsquo;une recette version meringue française qui marche du tonnerre, mais je voulais retenter la meringue italienne. Je m&rsquo;y étais aventuré au tout début (il y a des années!) et c&rsquo;était un beau foirage. Où la trouver ? J&rsquo;ai pensé à deux personnes : Pierre Hermé et Mercotte, tous les deux connus pour leurs macarons. Je me suis dit que je n&rsquo;allais pas choisir : la recette des coques serait celle de Mercotte, et celle de la ganache (crème de fruit de la passion), celle de Pierre Hermé. Les recettes sont tirées directement du site de Mercotte (mercotte.fr) et du livre &lsquo;<em>Macarons</em>&lsquo; de Pierre Hermé.</p>
