				<div class="et_pb_text_inner"><p>Des bretzels croquants au coeur tendre et moelleux. Un vrai goût de levain vient réhausser le tout, pour le plaisir de nos papilles.</p>
<p>Cela fait environ 2 ans que je suis tombé dedans. Deux ans à le surveiller, à l&rsquo;entretenir, à l&rsquo;observer et à en prendre le plus grand soin. Aujourd&rsquo;hui, il est « tendance » sur les réseaux sociaux, mais ce n&rsquo;est pas pour cela qu&rsquo;il me passionne. C&rsquo;est pour son petit goût bien particulier qu&rsquo;il apporte aux préparations.</p>
<p>De quoi je parle ? De mon levain, évidemment. J&rsquo;ai eu la chance de ne pas devoir le créer moi-même. Une amie avait suivi un cours dans une boulangerie réputée de sa région et ils étaient tous rentrés avec le levain de la boulangerie, un levain qui avait tout de même plus de 20 ans d&rsquo;âge à l&rsquo;époque. Elle m&rsquo;a expliqué comment en prendre le plus grand soin, et c&rsquo;est comme cela que l&rsquo;aventure a débuté. D&rsquo;abord entretenu à l&rsquo;épeautre, j&rsquo;ai finalement changé pour un mélange de seigle et de blé complet. Il n&rsquo;a jamais été aussi vaillant !</p>
<p>J&rsquo;ai testé de nombreuses recettes au levain, mais celle qui me plaît le plus est de confectionner du pain. Le goût de levain se marie tellement bien à ce produit essentiel, et rien de tel qu&rsquo;un morceau de bon pain avec un fromage goûteux&#8230; et je suis aux anges.</p>
<p>Mon chéri et moi avons eu la chance de visiter New York il y a quelques années. Il y a vécu 6 mois avant d&rsquo;entamer ses études, mais pour moi ce fut le premier voyage aux Etats-Unis. Tout y est démesuré. C&rsquo;est à la fois palpitant et effrayant. J&rsquo;y ai goûté de nombreux mets savoureux, mais je retiens surtout les bretzels aux flocons de sel. J&rsquo;ai déjà reproduit la recette de bretzels salés ou couverts de pop-corn, mais mon premier essai de bretzel au levain n&rsquo;était pas glorieux. J&rsquo;ai essayé une nouvelle recette, et BAM ! Dans le mille. Des bretzels moelleux, croquants, avec un vrai goût de levain.
